Morning Breakfast Frittata

Looking for a way to make weekday breakfast a bit easier? This is a great recipe to make ahead of time for an easy, grab-and-go breakfast in the morning! Prep this frittata on a Sunday and enjoy all week long.

Morning Breakfast Frittata


  • 12 eggs

  • 2 TBS milk of your choice

  • 1 c spinach, chopped

  • ½ small onion, chopped

  • ½ c mushrooms, chopped

  • 1 chopped bell pepper

  • ¾ c chopped bacon or sausage, cooked

  • Olive oil

  • Salt & pepper to taste


Preheat oven to 375 degrees F. In a round cake pan, coat the bottom and sides with a touch of olive oil to make sure that the frittata does not stick to the pan, coat well. Heat a sauté pan on the stovetop. Sauté the onions, spinach, & mushrooms until fragrant. In a large mixing bowl, whisk together the eggs, milk, salt & pepper. Transfer the veggie mixture into the mixing bowl with the eggs. Add in your cooked meat of choice at this point. Mix all of the ingredients together and pour the mixture into your oiled cake pan. Bake for 20-30 mins. Check the middle with a toothpick or knife to see if it is cooked all of the way through. Slice into 4-6 servings and eat right away or store it in your fridge for an easy breakfast for the week!
