Crockpot Beef Carnitas

Looking for an easy week night dinner that's ready when you walk in the door? Look no further! Throw this into your crockpot in the morning and dinner is ready for you when your day is over! Full of flavor and spices, this is sure to be a hit at your next dinner. Don’t forget the guacamole and salsa to go along with it.



3-5 lb beef roast

1 lime

½ c cilantro

2 tbs chili powder

1 tbs smoked paprika

2 tbs cumin

3 gloves crushed garlic

1 small red onion, chopped

1 can chopped green chilies

1 c water or beef broth

1 tbs avocado oil

Salt and pepper to taste


Heat a large stovetop pan on medium-high heat. Place your tbs of avocado oil into the pan (or you can sub for your cooking fat of choice). Once the pan has reached its temp, sear your roast until browned on each side for about 30-60 seconds. Place your roast into your crockpot and top with liquid of choice, onions, garlic, seasonings, and chopped cilantro. Juice your lime over the top of the roast and cover. Cook on low for 7-9 hours or on high for 4-5 hours. Once your roast is fork tender and shreds easily, take the meat out of your crockpot and shred on a cutting board. Serve with rice, a whole grain tortilla, or on top of a salad! Don’t forget your avocado for some healthy fats. Enjoy!
