Coconut Lime Crusted Cod
• 3-4 cod filets
• ¼ c unsweetened flaked coconut
• 2 limes, zested
• Juice of ½ lime
• ½ tsp chili powder (we used chili lime seasoning from Trader Joes)
• Dash of salt
• 2 large eggs
Preheat your over (or skillet) to 375 degrees F. In a bowl, crack open and whisk your two large eggs. While your oven preheats, on a large plate mix together your coconut, lime zest, chili powder and salt until well combined. Take your cod filets and one by one dip them into the eggs and then onto the coconut mixture, coating each side. Place your crusted cod onto a baking sheet or dish to go into the oven. Before baking, squeeze your ½ lime over the top of your cod filets to add some extra flavor. Place in the oven and bake for 15-25 minutes until your fish is firm and cooked through. If you’d like some added crunch, remove the fish from the oven when finished and place your oven on broil. Once ready, place your baking dish back into the over for about 30 seconds to a minute or until your top coconut crust is golden brown. Enjoy topped with cilantro and a side of cauliflower (or regular) rice!
