Avocado and eggs are the perfect combination for breakfast. They are full of healthy fats and good protein to start your day off right! If you're short on time this is a great option to put together in the morning.
Avocado Scramble Toast
• 2-3 large eggs
• 1 large avocado
• Salt and pepper to taste
• 2 slices of whole grain or gluten free toast (works great with sourdough as well)
• 2 tbs almond milk (or milk of choice)
Heat a saute pan on medium heat on your stovetop. While that heats up, cut your avocado in half and place into a small mixing bowl. With a fork, begin to mash your avocado with salt and pepper until it reaches desired consistency and set aside. Whisk together your milk and eggs in a small bowl and pour them into the pan for scrambled eggs. Be sure to stir them around! While the eggs complete cooking, place your toast into a toaster or toaster oven and be sure both sides are golden brown. Once finished, place your toast on a place and spread your avocado in an even layer. Top with your scrambled eggs and an optional radish slice or two. This is an easy breakfast that can be made quickly and keep you full until lunch!
