Teriyaki Steak Skewers with Quinoa Cabbage Salad

Here is a perfect summer dinner to serve with friends and family. Full of bright and bursting flavors, it's sure to be a hit at your next dinner. With the bold flavors of teriyaki and the crunch from the fresh quinoa salad, this is a healthy weeknight or weekend dinner that can please a crowd.

Steak Skewers:
• 1 ½ lb beef cut for stew (or steak cut into chunks)
• ¼ cup teriyaki sauce (I used pineapple teriyaki sauce)
• 1 tsp ground ginger
• 3 garlic cloves, crushed
• Salt and pepper to taste
• 1 tbs avocado or olive oil

Quinoa Salad
• 1 ½ cup cooked quinoa
• 3 chopped radishes
• ½ chopped cucumber
• 2/3 cup chopped purple cabbage

Green Goddess Tahini Dressing for Quinoa
• ½ cup tahini
• 2 tbs soy sauce or liquid aminos
• 1 tbs lime juice
• ½ cup cilantro
• 2 cloves of garlic
• Salt and pepper to taste
• 2 tbs apple cider vinegar
• 1 tbs rice vinegar
• 1 tsp ground ginger
*Place all ingredients in a blender! If you desire a thinner consistency, add water and blend.

Directions:
Marinate your steak in the teriyaki mixture at least an hour before cooking. While your steak sits, prepare your quinoa salad. In a large mixing bowl, place all of your ingredients and top with your tahini dressing. Mix well until combined. Top with cilantro and place in the fridge to chill your salad and let the flavors combine.

Once your steak is ready, place your steak chunks onto BBQ skewers and set aside as your grill heats (you can also cook these on a stove top in a cast iron or non-stick pan). Turn your grill heat up to low-medium and place your steak skewers on to cook. Be sure to rotate the skewer so that each side of the steak bites have grill marks and cook evenly- about 3-5 minutes on each side depending on how fast your grill cooks. Brush the extra marinade on as it continues to cook to caramelize the flavor on the grill. Cook until they reach your desired preference (rare, medium-rare, medium-well, well done). 

Pull your skewers off of the grill and serve with a side of your quinoa salad for a refreshing dinner full of bright flavors! Enjoy!
