Rhubarb grows in abundance in the summer months and is great for baking! Add this rhubarb banana cake to your next brunch and it's sure to be a hit!

Rhubarb Banana Breakfast Cake

Ingredients:
•1 c. rhubarb, chopped
•3 bananas, mashed
•2 eggs
•1/3 c honey or maple syrup
•1 tsp cinnamon
•1 tsp vanilla
•1 tsp baking powder
•½ tsp baking soda
•1 ½ cup oat flour (ground up whole oats)

Directions:
Preheat your oven to 375 degrees F. In a large bowl, combine your oat flour, baking powder, baking soda, and cinnamon and set aside (To make oat flour, place your oats into a blender until ground finely. Measure out your 1 ½ cups). In a separate bowl, mash your bananas and whisk in your eggs, honey and vanilla until well combined. Combine your dry ingredients with your wet. Slowly fold in your chopped rhubarb and pour the batter into a cake pan. Place in the oven and bake for 20-30 minutes or until firm in the middle. Let cool 10 minutes before serving. Enjoy as a tasty breakfast or even for dessert!
