Gluten-Free Berry Tart

A sweet and creamy berry tart using all dairy-free and gluten free ingredients! It’s the perfect addition to you Summer BBQ, a dinner party, or any night of the week you’re craving something sweet!

Ingredients:


CRUST:
1 C. coconut flour
½ C. coconut oil, room temperature
¼ C honey or maple syrup
¼ C. of crushed nuts (almonds taste best!)
Splash of vanilla extract

BERRY LAYER:

1 C. berries, fresh or frozen (any berry works)
¼ C. coconut sugar or maple syrup
2 TBS. water

CREAM LAYER:
¾ tub of whipped topping of choice! (to keep it dairy-free, use coconut milk whipped topping that can be found in the frozen section)

Directions:
Preheat oven to 350 degrees Fahrenheit. While the over pre-heats, prep your crust by mixing together your flour, oil, sweetener of choice, and vanilla into a ball and mixing thoroughly until it starts to get crumbly. Stir in your nuts if desired! Form your dough into a ball and transfer it to a well-oiled tart or pie pan. Push the dough down into the bottom of the pan with your hands until the ball has been evenly flattened throughout the pan. Bake for about 8-10 minutes or until the crust looks golden-brown on the edges. Let cool completely (you may place it in the freezer to speed up this process).
While the dough is chilling, begin making your berry layer. Use a small saucepan and turn your burner on high. Place your berries (fresh or frozen) into your pot with water, sugar or syrup, and add water as needed. Bring to a quick boil and reduce heat to a simmer. You want the berries to reach a liquid consistency, but leaving some of the berries still intact. As it cools, the berry mixture will stiffen a bit creating a nice, thick layer. Let cool a bit and spread it onto the crust in an even layer. Place back into freezer to cool completely and harden up a bit to spread the topping on.
Once the tart is completely cooled, take your whipped topping and spread it on generously! The berries will melt into it a bit creating a swirled look. Top with desired toppings such as more nuts, berries, coconut, chocolate chips...the possibilities are endless! Keep chilled until ready to serve. Enjoy!
