Citrus Quinoa Salad

Citrus Quinoa Salad


Ingredients:
•1 ½ cup quinoa, cooked
•2-3 small mandarin oranges
•1 c cherry tomatoes, halved
•½ medium red onion, chopped
•Orange bell pepper, chopped
•Salt and pepper to taste

Dressing:
•1 ½ tbs olive oil
•2 tbs apple cider vinegar
•2 tbs fresh squeezed orange
•1 tbs orange zest
•Salt and pepper to taste
•1 tsp honey

Directions:
In a large mixing bowl, combine all of your salad ingredients (be sure to follow the directions for cooking on the bag of your quinoa. Once done- let it cool completely before making this salad). In a separate bowl, whisk together your dressing for the salad until well combined. Pour your citrus vinaigrette over the quinoa salad and gently mix together. Place in the fridge and be sure to let it sit for at least 20-30 minutes to allow the salad to soak up the dressing flavors. Pair this with a fresh salad and a healthy protein for your next meal!
